I was wondering if I upgrade my 07 SE gauges to one with a tach. Do I just have to plug in the new gauges or is there additional wiring I would have to change.

I can't imagine ford using a different wire harness base on instrument cluster. I would think all the plugs would be there.

Any ABS or airbag lights on?

If not you got lucky, 99.9% of the time if you don't have the cluster memory transferred you'll have those lights on which means those systems are not functioning.
